14 – Welsh Farm Chicken

This dish features individual Cornish game hens or young chickens in a tasty vegetable sauce. It is served while hot, along with a wonderful sauce. It’s delicious!

Makes 6 Servings

Cooking + Prep Time: 1 & 1/4 hours

Ingredients: • 8 medium tomatoes, ripe

• 3 game hens, Cornish

• 1/4 cup of oil, olive

• 2 tbsp. of butter, unsalted

For Sauce • 2 round-sliced zucchinis

• 1 chopped onion, small

• 6 sliced mushrooms, small

• 1 crushed garlic clove

• A pinch each of kosher salt and ground pepper, as

desired

Instructions:

1. Fill large sized bowl with cold water and ice. 2. Bring large sized pot of salted, filtered water to boil. Add tomatoes. Leave pot uncovered and cook for a couple minutes, till skins have loosened. Drain in colander. Immerse in the ice water for a few minutes so that cooking process is halted. Drain. Then peel and quarter the potatoes.

3. Remove wing tips and feet from hens. Cut each into halves.

4. Heat oil in pan on med. heat and add the butter. Once butter starts to bubble, add the chicken. Flip once while frying for 12-15 minutes, till chicken is browned evenly.

5. Stir in kosher salt, ground pepper, garlic, mushrooms, onion, zucchinis and tomatoes with chicken. Cover the pan and lower the heat.

6. Simmer and baste chicken frequently with sauce, till it has no pink remaining in the middle. This usually takes 18-20 minutes. Instant-read thermometer should read about 165F. Remove to serving plates or bowls. Serve.
